Recipe: Chocolate Banana Peanut Butter Protein Cake

A few weekends ago my sister (a.k.a the phenomenal baker) visited. Naturally we decided to bake up a storm…in a healthy way! LeanFit featured a recipe involving all the things that I love: Chocolate, Peanut Butter, Banana, Coconut and cake. There was no doubt that I was going to try it. The best part of this recipe is that, aside from the baking powder, I had all the ingredients at home – No random things like agar agar, buckwheat flour, or tofu! What is even better is that it didn’t require one to purchase a $600 blender. This recipe could not get any better!

 

Chocolate Banana PB Protein Cake

Ingredients

  • 1 scoop (32g) of 100% (Leanfit) Whey Chocolate
  • 125g coconut flour
  • 2 TBSP cocoa powder
  • 1 TBSP cinnamon
  • 2 TBSP baking powder
  • 2-3 TBSP stevia to taste (optional)
  • 300g banana, ripe and mashed
  • 3 eggs
  • 60g natural peanut butter, smooth
  • 1/4 cup almond milk

Instructions

  1. Pre-heat the oven to 350ºF
  2. In a bowl mix all the dry ingredients together
  3. Once combined add in the wet ingredients and mix thoroughly until the batter has no clumps
  4. Pour the mixture into an 8” x 8” greased pan
  5. Bake for 20-25 minutes until brownie is firm to touch and can separate from the pan easily
  6. Cut into 12 large pieces and try not to eat them all in one sitting

***Optional Icing***
In addition to the ingredients needed above, mix 1 scoop (32g) of 100% (Leanfit) Whey Chocolate and Stevia to taste. Slowly add in almond milk until the mixture is a spreadable, icing like consistency. Spread over brownies and enjoy!
